Victor Garvey

Chef Patron

Born in New York to an American father and French-Spanish mother, Victor Garvey has always had an international outlook. Moving to Barcelona when he was six years old, he started working in restaurant kitchens as a teenager. Stints in many of Spain’s most notable restaurants followed before wanderlust – and great opportunities – took him to Los Angeles, Las Vegas, Tokyo, Copenhagen, Marbella and finally, to London, where he opened SO|LA in 2019.

Vasilis Tillianakis

Sous Chef

Hailing from Crete, Vassilis is a talented and imaginative cook. His particularly passion is for expressing creativity through the highest-quality ingredients. Food is in his blood; as well as being a chef, Vasillis is a bee-keeper and olive oil producer, through his family business.

Jamie Raines

Head Pastry Chef

Predominantly classically-trained in both sweet and savoury patisserie, Jamie brings to SO|LA over twenty years’ experience in a range of positions in the UK and overseas, most recently two years as head pastry chef at Catherine’s Café on Antigua. Prior to that Jamie spent five years at Corbin & King, first as senior sous chef and then as head pastry chef at The Delaunay, Brasserie Zédel and Bellanger.

Marco Barradas

General Manager

Portuguese-born, Marco started his career in Jersey in the Channel Islands before moving to London in 2016. With nearly a decade of experience in a variety of roles within the hospitality industry, he has a flair for leadership and for pushing the boundaries of what it is possible to achieve.
